(This is my new favorite pasta dish. It’s amazing and I highly recommend giving it a shot!)
Fettucine with Sweet Potato, Feta and Olives
Ingredients:
3 lb sweet potato, cut into small cubes
1/2 cup extra virgin olive oil
4-6 cloves of garlic, crushed or finely diced
2 Tb butter
4 red onions, sliced into thin wedges
1 lb basil fettucine
13 oz soft sheep’s feta cheese, diced
6.5 oz pitted kalamata olives, cut in half
1/2 cup firmly packed basil, loosely chopped or torn
1. Preheat oven to 400 degrees F. Place sweet potato, oil and garlic in a big bowl and toss to coat potatoes. Lay out the sweet potatoes in a roasting pan and roast for 15 minutes. Flip over/turn and roast other side for another 15 minutes, until tender and golden. Keep warm.
2. Meanwhile, melt butter in a deep frying pan and cook the onions over low heat, stirring occasionally, for 25-30 minutes, or until onions are soft and slightly caramelized.
3. Cook the pasta in a large pot of rapidly boiling salted water until al dente (about 3 minutes). Be careful not to overcook! Drain and return pasta to pan. Add the onion to the pasta and gently toss together.
(from here I assembled individual plates of the pasta/ onion mixture, placing the sweet potato, feta, olives and basil on top and drizzling with extra virgin olive oil)
